Halibut in Cream Sauce

This Halibut in Cream Sauce is the most delicious recipe for fish lovers!

4 6 oz. halibut steaks

3 Tbsp. unsalted butter

1 minced garlic clove

1/2 lb. sliced brown or white mushrooms

grated zest of 1 lemon

2 Tbsp. drained and rinsed capers

1 cup all-dairy heavy cream

freshly ground black pepper, to taste

1 Tbsp. chopped fresh parsley

1 lemon cut into wedges, for garnish

Rinse halibut under cold water and pat dry with paper towels.

In a large nonstick skillet, heat butter over medium-high heat.

When butter is hot and bubbly, add fish fillets and cook 2-3 minutes per side, or until fish flakes easily with a fork and is lightly browned. Remove and keep warm. Add garlic and mushrooms to pan and saute 1 minute. Add lemon zest, capers, cream, black pepper and parsley. Bring almost to a boil, reduce heat to low and simmer until sauce is slightly thickened, about 2 minutes, stirring occasionally. Taste, and adjust seasonings.

Add halibut steaks and heat through. Garnish with lemon wedges and serve immediately with Mandarin Walnut Lettuce Salad.
