Grandma’s Rice Casserole

Grandma’s Rice Casserole is a great way to use up leftover rice. Make it for supper, your family will love it!

1 lb. lean ground beef

1/3 cup chopped onion

1/2 cup chopped green pepper

2 cups cooked long grain rice

1 14.5 oz. can diced tomatoes

1 11 oz. can whole kernel corn, drained

1 2 1/4 oz. can sliced ripe olives, drained

6 bacon strips, cooked and crumbled

2 tsp. chili powder

1 tsp. garlic powder

1/2 tsp. salt

1 1/2 cups shredded cheddar cheese, divided

1/2 cup dry bread crumbs

1 Tbsp. butter, melted

Preheat oven to 350 degrees.

In a large skillet, cook beef, onion and green pepper over medium heat until meat is no longer pink. Drain.

Stir in rice, tomatoes, corn, olives, bacon and seasonings, heat through. Add 1 cup cheese, stirring until cheese melts.

Transfer to a greased 11 x 7 inch baking dish. Sprinkle with remaining cheese.

Toss bread crumbs with butter, sprinkle over top.

Bake, uncovered, 15-20 minutes or until the cheese is melted.
