German Apple Pancake

Try this German Apple Pancake for a delicious breakfast treat or a light supper meal!

Apple topping:

1 1/2 tsp. butter

1 1/2 tsp. canola oil

4 granny smith apples, peeled and sliced

3 Tbsp. sugar

1/2 tsp. vanilla extract

1/4 tsp. cinnamon

1 cup apple cider


3 large eggs

1/4 cup all-purpose flour

2 tsp. sugar

1/4 tsp. salt

1 cup milk

To prepare topping: Heat butter and oil in a large nonstick skillet over medium heat until melted.

Add apples and 3 Tbsp. sugar, cook, stirring until apples are tender and golden, about 20 minutes. Stir in vanilla and cinnamon.

Bring cider to a boil in a medium saucepan over medium-high heat.

Cook until reduced to 1/3 cup (10-15 minutes). Stir into sauteed apples. Set aside.

To prepare pancake: Preheat oven to 400 degrees. Coat a 12 inch cast iron or oven proof skillet with cooking spray.

Whisk eggs, flour, 2 tsp. sugar and salt in a mixing bowl until smooth.

Pour batter into the prepared skillet. Bake the pancake for 15 minute. Reduce oven temperature to 350 degrees, bake until pancake is golden and puffed, 15 more minutes.

Meanwhile gently reheat apple topping if necessary.

Dust pancake with powdered sugar and cut into wedges.

Serve immediately with warm apple topping.
