Fudgy Oatmeal Bars

These Fudgy Oatmeal Bars are great for to put in kid’s lunch boxes!

2 cups brown sugar, packed

1 cup + 2 Tbsp. butter, softened and divided

2 tsp. vanilla extract, divided

2 eggs

2 1/2 cup all-purpose flour

1 tsp. baking soda

1 tsp. salt, divided

3 cups quick-cooking oats, uncooked

14 oz. can sweetened condensed milk

12 oz. package semi-sweet chocolate chips

1 cup walnuts, chopped

Beat brown sugar and one cup butter until light and fluffy, blend in one teaspoon vanilla and eggs.

Sift together flour, baking soda and 1/2 tsp. salt, stir in oats and add to egg mixture.

Reserve a third of oats mixture, press remaining oats mixture into a greased jelly-roll pan.

Heat remaining butter, condensed milk and chocolate chips over low heat, stirring constantly until chocolate is melted, remove from heat.

Stir in nuts, remaining vanilla and salt. Spread over oats mixture in pan.

Drop reserved oats mixture by rounded teaspoonfuls onto chocolate mixture.

Bake at 350 degrees for 25-30 minutes or until golden. Cut into bars while still warm.
