Fresh Peach Pie

This Fresh Peach Pie is a family favorite. Make this one for a special summer treat!

Recipe for Two Crust Pastry

1 cup sugar

2 Tbsp. + 1 1/2 tsp. cornstarch

1/4 ts. salt

1/2 cup water

4-5 cups peaches, pitted, peeled and sliced

1 Tbsp. lemon juice

milk, optional

Combine sugar, cornstarch and salt in a large saucepan.

Add water and peaches. Bring to a boil, boil for one minute, stirring constantly. Cool, stir in lemon juice. Cool.

Pour cooled peach mixture into a 9 inch pie plate lined with half of the crust recipe.

Roll remaining pie crust dough and fit over top.

Seal edges well and cut vents in top.

Bake on lower shelf of oven at 425 degrees for 50 minutes.

If desired, brush milk on top of crust to aid in browning. Remove from oven.

Serve warm or at room temperature.
