Fresh Papaya or Mango Salsa

Make this delicious Fresh Papaya or Mango Salsa anytime you need to step up a fish or chicken dish!

1 small minced red onion

1 small minced fresh jalapeno peppers or 1-2 Tbsp. canned diced green chilies, to taste

1/2 cup chopped red bell pepper

2 minced garlic cloves

2 cups diced papaya or mango

1 seeded and chopped ripe tomato

2 Tbsp. fresh chopped cilantro

2 Tbsp. chopped scallions

2 Tbsp. fresh lime juice

1 Tbsp. pure-pressed extra virgin olive oil

freshly ground black pepper to taste

In a medium bowl, combine all ingredients and mix well. Taste, and adjust seasonings. Refrigerate 1 hour before serving.
