Fresh Mexican Salsa

This Fresh Mexican Salsa recipe makes a healthy, tasty choice anytime you want or need a salsa recipe!

2 cups diced ripe tomatoes

2 minced garlic cloves

2 Tbsp. diced red onion

2 Tbsp. diced scallions

2 Tbsp. minced fresh cilantro

1 small diced fresh jalapeno or 1 to 2 Tbsp. canned diced green chilies (if using jalapeno, wear gloves to prepare)

2 Tbsp. pure-pressed extra virgin olive oil

1 to 2 Tbsp. fresh lemon or lime juice, to taste

1 tsp. dried oregano

freshly ground black pepper, to taste

In a medium bowl, combine all ingredients. Taste and adjust seasonings. Chill before serving.

makes about 2 3/4 cups of salsa
