French Butter Cookies

These French Butter Cookies are a light, delicious cookie, enjoy these year round!

1 cup butter, room temperature

2/3 cup light brown sugar, packed

1 large egg

1 tsp. pure vanilla extract

2 1/2 cups sifted all-purpose flour

1 tsp. salt

1/2 cup granulated sugar

Combine the butter and brown sugar in the bowl of an electric mixer fitted with the paddle attachment, and cream on high speed until fluffy, 2-3 minutes.

Add egg and vanilla and mix to combine. Add flour and salt and mix on low speed until the flour is mixed in.

Roll the dough into three 1 1/2 inch diameter logs. Wrap in plastic wrap, and refrigerate until firm, at least an hour or overnight.

Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

Roll the cookie logs in granulated sugar, coating evenly and slice into 1/4 inch rounds.

Place on baking sheet about one inch apart. Using a toothpick or small end of a piping tip, make 4 decorative holes in each cookie.

Bake 15-20 minutes or until golden brown. Remove from oven and transfer to a wire rack to cool completely.

Cookies will keep at room temperature in an airtight container up to 1 week.
