Flaky Pie Crust

This will make a 9 or 10 inch pie crust.

8 Tbsp. cold butter, cubed

1 1/2 cups pastry flour is best, use what you have

dash salt

4-6 Tbsp. cold water

Mix in a bowl, flour and salt. Add butter cubes, mixing with a fork until pea size crumbles form. Slowly add cold water, starting with 4 Tbsp. until dough holds together. Add more water if needed. Place in a plastic bag, press down to form a disk shape and place in refrigerator for 1 hour. Take dough out of refrigerator and roll out onto a floured surface for a 9 or 10 inch pie. Fit crust into pie pan and cover with plastic wrap and freeze another hour. Prick the bottom of crust with a fork a few times, bake in a preheated 450 degree oven for 16-18 minutes or until edges of crust is golden brown and bottom appears flaky. Take out of oven and cool on a wire rack.
