Fettuccine Alfredo

Fettuccine Alfredo is always a family favorite, there won’t be an empty seat at the dinner table!

1 lb. dried fettuccine pasta

6 Tbsp. unsalted butter

2 shallots or 2 Tbsp. minced onion

2 garlic cloves minced

1 cup heavy cream

1 cup finely grated Parmesan Cheese

1/2 tsp. salt

1/4 tsp. freshly ground black pepper

fresh parsley for garnish, optional

Bring a large pot of water to boil and cook fettuccine in boiling salted water until al dente. Drain and reserve 1/4 cup of pasta water.

While pasta is cooking, melt the butter in a medium saucepan over medium-high heat. Add minced shallot, garlic and saute until tender. Add 1 cup heavy cream and bring to a boil. Cook for a minute, remove from heat.

Add pasta and 1/4 cup reserved pasta water to the saucepan with butter cream sauce and half of the Parmesan cheese.

Toss to thoroughly combine over medium heat. Stir constantly. Season with salt and pepper, to taste.

Sprinkle with remaining Parmesan and garnish with parsley. Serve immediately with Homemade Breadsticks, if desired.
