Fast Chicken ‘n’ Dumplings

Fast Chicken ‘n’ Dumplings is actually made from scratch, making it a healthier choice.

4 cups chicken broth or homemade recipe here

1/2 cup celery,sliced

1/2 cup carrots, sliced

1 bay leaf

1 1/2 tsp. dried parsley flakes, divided

2 cups biscuit/baking mix or homemade recipe here

1/4 tsp. dried thyme

dash ground nutmeg

2/3 cup milk

3 cups chicken breast, cooked and cubed

In a 5 quart Dutch oven or kettle, combine broth, celery, carrots, bay leaf and 1 tsp. parsley, bring to a boil.

To prepare biscuits: Use homemade recipe or do this-Combine biscuit mix, thyme and nutmeg in a bowl, stir in milk and remaining parsley just until moistened.

Drop by tablespoonfuls into boiling broth.

Cook, uncovered, for 10 minutes, cover and cook 10 minutes longer.

With a slotted spoon, remove dumplings to a serving dish, keep warm.

Bring broth to a boil, reduce heat.

Add chicken, heat through.

Discard bay leaf.

Spoon over dumplings.
