Easy Orange Balsamic Chicken

Serve this delicious, moist Easy Orange Balsamic Chicken for an unforgettable dinner tonight!

3 lbs. chicken pieces, trimmed of excess fat

Marinade:

1 cup fresh orange juice

1/2 tsp. salt

1/2 tsp. freshly ground black pepper

1/2 tsp. cinnamon

1/2 tsp. freshly grated nutmeg

2 tsp. finely grated orange zest

1/4 cup balsamic vinegar

Glaze:

reserved marinade

1/3 cup honey

Place the chicken pieces in a large zip lock bag.

Whisk together all of the marinade ingredients. Pour over the chicken in the bag. Squeeze out as much air as possible and seal baggie. Place in the refrigerator for an hour or two, turning the bag occasionally. Save the marinade.

Place the chicken pieces on a rack in a roasting pan and roast skin side up, uncovered in a 375 degree oven for about 50-60 minutes. After 25 minutes of roasting, brush the chicken pieces with the glaze every 5-10 minutes or at least 4 times during roasting.

To prepare the glaze: In a small saucepan, combine the saved marinade and honey. Simmer until reduced by half and begins to thicken slightly. If there is any leftover glaze, serve over the chicken and Skillet Pecan Rice for a delicious meal.
