Devils Food Cake

This Devils Food Cake has so much flavor, it doesn’t need to be frosted!

1/2 cup unsalted butter

3 eggs

2 1/2 cups all-purpose flour

1/2 cup unsweetened cocoa or Dutch processed cocoa powder

1 1/2 tsp. baking soda

1/4 tsp. salt

1 cup sugar

1 cup brown sugar

2 tsp. vanilla

1 cup buttermilk

1/2 cup boiling water

whipped cream

small whole strawberries or red raspberries

Allow butter and eggs to stand at room temperature for 30 minutes. Grease a 13 x 9 x 2 inch baking pan.

In a medium bowl, stir together flour, cocoa powder, baking soda and salt. Set aside.

In a large mixing bowl, beat butter with an electric mixer on medium-high speed for 30 seconds. Add sugar, brown sugar and vanilla. Add eggs one at a time, beating well after each addition, just until combined. Add boiling water, beat until smooth. Add buttermilk, mix to combine. Add dry ingredients gradually and mix until smooth.

Pour into prepared pan. Bake at 350 degrees for 30-35 minutes or until a toothpick inserted near center comes out clean.

Cool in pan on a wire rack. Serve with whipped cream and strawberries or raspberries.
