Denver Sandwich

This Denver Sandwich makes a delightful sandwich to serve at breakfast time!

3 Tbsp. butter

1/3 cup finely chopped onion

1/3 cup finely chopped green pepper

2 slices ham, chopped

3 eggs, slightly beaten

salt to taste

cayenne pepper to taste

4 slices buttered bread or toast

prepared mustard

Melt the butter in an 8 inch skillet. Add onion, green pepper and ham, cook until the onion is soft.

Pour the beaten eggs over the ham and vegetables, add salt and cayenne pepper. Cook over low heat until lightly golden. Turn over with a spatula and quickly brown lightly on the other side.

Divide the omelet in half and place each half on a piece of buttered bread or toast.

Spread with mustard and top with the other slice of bread. Serve warm.

*You can easily add cheese or other favorites to this sandwich.
