Delicious Pineapple Cake

This Delicious Pineapple Cake is incredibly moist and topped with a wonderful pineapple fluff frosting. This cake is made without butter or oil!

Cake:

2 1/4 cups all-purpose flour

1 1/4 cups sugar

2 tsp. baking soda

1 tsp. vanilla extract

1 20 oz. can crushed pineapple in 100% juice, do not drain

2 eggs

Frosting:

1 3.5 oz package vanilla instant pudding mix

1 20 oz. can crushed pineapple, do not drain

1 cup heavy whipping cream, whipped

Preheat oven to 350 degrees. Grease and flour a 9 x 13 inch baking pan.

In a large bowl, whisk together flour, sugar and baking soda. Mix in vanilla, crushed pineapple and eggs to combine.

Pour into prepared baking pan and bake 25-30 minutes or until a toothpick inserted comes out clean. Let cool completely.

To prepare frosting: Whisk pineapple and pudding mix together until combined. Gently fold in whipped cream and mix until combined.

Spread on cooled cake.

Refrigerate at least 30 minutes before serving.
