Date Filled Oatmeal Cookies

These Date Filled Oatmeal Cookies are delicious! Add them to your cookie platter for the holiday season.

1 cup pitted dates, chopped

1/2 cup sugar

3/4 cup water

1/2 cup butter

1/2 cup brown sugar

1 1/2 cups flour

1/4 tsp. baking soda

1/2 tsp. salt

1 1/4 cups quick cooking oatmeal

Preheat oven to 350 degrees.

Put the dates, sugar and 1/2 cup water in a small saucepan and cool slowly until thick and smooth, about 15 minutes. Set aside.

Cream butter and add brown sugar, mix well. Mix together flour, baking soda and salt. Add to butter and brown sugar, beat well.

Add oatmeal and combine thoroughly. Add about 2-4 Tbsp. water, enough to form dough into a ball so it can be rolled.

Refrigerate dough about 15 minutes.

Roll dough out to about 1/8 inch thick. Cut into 2 inch rounds.

Put them together in pairs with date mixture as filling and press edges firmly together.

Place on baking sheets. Bake about 15 minutes or until browned.

Yield: about 24 cookies
