Dandelion Salad with Bacon

Dandelion Salad with Bacon makes a healthy, delicious side to serve with almost any entree!

1/4 cup vinegar

1 1/2 tsp. sugar

1 clove garlic, minced

1/2 tsp. freshly ground black pepper

6 slices bacon

1 lb. dandelion greens, trimmed, washed and dried

2 large ripe tomatoes, each in 4 thick slices

1/2 cup thinly sliced scallions

Mix the vinegar, sugar, garlic and pepper in a small bowl. Let stand at least 30 minutes.

Fry bacon in a large skillet until crisp. Place on paper towels to drain.

Remove the skillet from heat and add greens to the hot bacon fat in the skillet, gently stir for a minute or until the greens wilt a little.

Add vinegar mixture and mix well.

Arrange the tomato slices on a large plate or individual salad plates, mound a portion of dandelion greens on each slice, and sprinkle the scallions on top.

Serve with Creole Pasta with Sausage and Shrimp for a delicious meal.
