Creamy Tomato Soup

This Creamy Tomato Soup is delicious and is so versatile, add rice or spinach to make it different each time!

2 Tbsp. butter

1 medium onion, finely chopped

3 cloves garlic, minced

10 cups canned crushed tomatoes

5 1/4 cups chicken stock-homemade recipe here

3 sprigs fresh oregano, + more for garnish

1/2 cup half & half

salt and freshly ground black pepper

Melt butter in a medium saucepan over medium-low heat.

Add onion and garlic. Cook stirring until translucent, about 8 minutes.

Add tomatoes, chicken stock and oregano, cover and bring to a boil.

Reduce heat, simmer gently, uncovered, until thickened, about 45 minutes.

Remove the oregano sprigs.

Slowly add half & half, stirring constantly.

Season with salt and pepper.

Garnish with oregano. Serve hot.
