Creamy Honey Mustard Chicken with Bacon

Serve this delicious Creamy Honey Mustard Chicken with Bacon for a wonderful dinner tonight!

1/3 cup honey

3 Tbsp. whole grain mustard

1 1/2 Tbsp. minced garlic

1 Tbsp. olive oil

salt to season

5 skinless boneless chicken breasts or thighs

1/2 cup diced bacon

1/3 cup cream

1 cup milk

1 tsp. cornstarch

2 Tbsp. chopped fresh parsley

In a large shallow dish, combine honey, mustard, garlic, oil and salt to taste. Coat chicken evenly in the sauce. Set aside.

Heat a nonstick skillet over medium heat. Fry bacon until crispy, transfer to a plate. Using the same skillet, sear chicken fillets on each side in the bacon drippings until just beginning to brown, about 3 minutes per side.

Add any remaining honey mustard sauce into the skillet with the cream and milk. Bring to simmer while stirring occasionally, about 3 minutes or until chicken is cooked through. Transfer chicken to a warm plate.

Add the cornstarch mixture to center of pan, mixing until sauce thickens. Place chicken back into pan and coat with the sauce. Top with bacon and garnish with parsley.

Serve over Parmesan Rosemary Mashed Potatoes, if desired or try rice or pasta.
