Creamy Cheddar Soup

Try this quick and easy Creamy Cheddar Soup when you need to fix something quickly!

1 small onion, chopped

2 large pimentos, chopped

3 Tbsp. butter

3 Tbsp. all-purpose flour

1 1/2 cups chicken stock-homemade recipe here

1 1/2 cups half & half

3/4 cup grated sharp cheddar cheese

salt and ground black pepper, to taste

dash of cayenne pepper, optional

In a saucepan, saute onion and pimentos in butter for 5-7 minutes. Blend in flour.

Add stock and half & half. Cook until thick.

Add cheese and stir until melted. Add salt and pepper to taste and if desired, cayenne pepper.

Serve with Italian Roast Beef Sandwich for a delicious meal.
