Creamed Chicken with Vegetables

Serve this Creamed Chicken with Vegetables over toast or biscuits for a delicious meal!

2 Tbsp. butter

3 Tbsp. flour

1 cup milk

1/3 cup heavy cream

1/8 tsp. freshly ground black pepper

1 1/2 cups cubed cooked chicken

2 1/2 Tbsp. lemon juice

1 tsp. grated lemon zest

salt to taste

2 hard-boiled eggs, chopped

1/4 cup finely chopped celery

1/2 cup cooked peas

1/2 cup cooked mushrooms

1/4 cup sliced cooked carrots

Melt the butter in a saucepan and stir in the flour. Cook for 2-3 minutes over medium heat, stirring constantly until well blended.

Gradually add milk and cream, stir for 5 minutes until thickened and smooth. Add pepper, chicken, lemon juice, lemon zest, eggs, celery, peas,mushrooms, carrots and salt to taste. Simmer 5 minutes more or until heated through.

Serve over toast or biscuits.
