Crab Bisque

This Crab Bisque has a creamy texture and a delicate taste!

2 Tbsp. butter

1 tsp. finely chopped onion or shallot

1 Tbsp. finely chopped parsley

1 1/2 cups chopped crab meat (fresh, cooked, canned or frozen)

2 Tbsp. flour

2 cups chicken stock-homemade recipe here

2 cups light cream

pinch of cayenne

salt to taste

Melt butter in a saucepan, add onion or shallot and cook slowly until golden.

Add parsley and crab meat. Cook over low heat, stirring often for 5 minutes.

Add the flour, stir to blend, cook 3 minutes. Stir in the chicken stock and simmer, partially covered for 20 minutes.

Add the cream and cayenne pepper. Heat and add salt to taste before serving.

Yield: 5 cups
