Corned Beef Hash

This Corned Beef Hash is chopped corned beef mixed with potato, onion and a rich cream. Serve with fresh tomatoes, fresh bread or a poached egg on each serving.

2 cups chopped cooked corned beef

2 cups chopped boiled potatoes

1 small onion, chopped fine

freshly ground black pepper

salt

4 Tbsp. butter

5 Tbsp. heavy cream

Mix beef, potatoes, onion, pepper and salt to taste.

Melt butter in a 10 inch cast iron skillet. Spread beef mixture over the bottom and press down with a spatula.

Fry over medium-low heat for 15-20 minutes. Use the spatula and look underneath.

If it is nicely browned, turn hash over. Slide it out onto a dinner plate, and invert the plate over the skillet.

Pour cream evenly over the meat and cook another 15-20 minutes, until the second side is nicely brown.
