Coconut and Mango Oat Breakfast Bites

Prepare these healthy Coconut and Mango Oat Breakfast Bites in the evening and store in refrigerator for a quick breakfast on busy mornings.

1/4 cup raisins (optional)

1 ripe banana, mashed

2 cups rolled oats

1/3 cup desiccated coconut

1 cup coconut milk

1 cup frozen mango pieces

1 egg, beaten

Preheat oven to 375 degrees.

Place raisins in a small bowl and soak in boiling water.

In a large mixing bowl add banana, oats, coconut and coconut milk. Stir to combine. Add mango pieces and stir to break down. Add the beaten egg and mix until well combined.

Drain the raisins and mix them through the oat mixture.

Grease an 8 x 8 inch baking pan with coconut oil. Spread the mixture out smoothly. Bake 28 minutes.

Allow to cool before cutting into bite sized pieces.
