Cinnamon and Banana Protein Mini Muffins

Try these deliciously healthy Cinnamon and Banana Protein Mini Muffins for a great tasting treat!

3/4 cup quick oats

3 Tbsp. unsweetened vanilla almond milk

1/2 Tbsp. baking powder

1 scoop vanilla protein powder

2 egg whites

1 small banana, mashed

2 Tbsp. crushed walnuts

cinnamon to taste

Options to add- dark chocolate chips, blueberries, raspberries, strawberries

Line a 6 cup mini muffin tin with baking paper cups.

Stir to combine all ingredients in a bowl to make a pour able batter, it batter is to firm, add a little more almond milk to thin.

Pour batter into muffin cups, about 3/4 full.

Sprinkle with crushed walnuts or additional cinnamon.

Bake in a 350 degree oven for 20 minutes or until a toothpick inserted comes out clean.

Cool slightly in pan and enjoy.

Double or triple recipe if you want more muffins.
