Chocolate Yogurt Cake

This Chocolate Yogurt Cake makes a great breakfast cake plus it’s chocolate, what could be better!

6 Tbsp. butter at room temperature

1 1/4 cups sugar

2 eggs

1 3/4 cups flour

2/3 cup cocoa powder

1 1/2 tsp. baking powder

1/2 tsp. baking soda

3/4 tsp. salt

1-(6 oz.) container vanilla yogurt

1/3 cup water

1 tsp. vanilla

Glaze:

1 1/2 cups powdered sugar

2/3 cup cocoa powder

3-4 Tbsp. water

1 tsp. vanilla

In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda and salt. Set aside.

Cream butter and sugar until light and fluffy. Add eggs one at a time, beating after each addition to combine.

Mix in a small bowl, yogurt, water and vanilla. Add half of flour mixture to butter mixture, mix and add yogurt mixture and remaining flour mixture. Mix until just combined.

Line a 9 x 5 inch loaf pan with parchment paper and spray with cooking spray.

Pour batter in pan and bake in a preheated 350 degree oven for 60 minutes.

Cool in pan for 15 minutes. Turn out and cool completely.

To prepare Glaze: Whisk together the powdered sugar, cocoa powder, water and vanilla until smooth. Pour over cooled cake.
