Chocolate Refrigerator Cookies

This Chocolate Refrigerator Cookies will become a family favorite!

1 1/4 cups butter, softened

1 1/2 cups powdered sugar

1 egg

3 cups cake flour

1/2 cup baking cocoa

1/4 tsp. salt

Beat butter and sugar until light and fluffy, add egg, beating well. Blend in flour, cocoa and salt. Cover and chill for one hour.

Divide dough in half. Shape each half into a roll 1 1/2 inches in diameter. Wrap and chill at least 8 hours.

Cut rolls into 1/8 inch slices. If dough crumbles while cutting, let warm slightly.

Place one inch apart on ungreased baking sheets.

Bake at 400 degrees for about 8 minutes. Immediately transfer to wire racks to cool.

Frost with Fudge Frosting.

Makes 8 dozen

Fudge Frosting:

1/4 cup shortening

1/3 cup milk

1 cup sugar

2 1 oz. squares unsweetened baking chocolate, melted

1/4 tsp. salt

1 tsp. vanilla extract

Bring all ingredients except vanilla to a boil in a saucepan, stirring occasionally. Boil one minute without stirring.

Place pan in a bowl of ice and water.

Beat until frosting is cooled and thickened. Stir in vanilla.
