Chocolate Chip Chickpea Blondies

Chocolate Chip Chickpea Blondies are a healthy choice, made with chickpeas, peanut butter and no flour. They are gluten free and vegan!

1 15 oz. can chickpeas, rinsed and drained

1/2 cup all natural peanut butter or almond butter

1/3 cup pure maple syrup or agave nectar

2 tsp. pure vanilla extract

1/2 tsp. salt

1/4 tsp. baking powder

1/4 tsp. baking soda

1/3 cup vegan or regular dark chocolate chips + 2 Tbsp.

sea salt, for sprinkling

Preheat oven to 350 degrees. Spray a 8 x 8 inch baking pan with nonstick cooking spray.

In a food processor, add all ingredients except chocolate chips and process until batter is smooth.

Fold in 1/3 cup chocolate chips. Batter will be thick. Spread batter evenly in prepared pan. Sprinkle with 2 Tbsp. of chocolate chips on top.

Bake 20-25 minutes or until a toothpick comes out clean and edges are slightly brown.

The blondies will look under cooked. Cool for 20 minutes on wire rack. Sprinkle with sea salt and cut into 16 squares.

Adding an egg to the batter will make it more cake-like, but not vegan.
