Chipotle Cheese Chicken Taquitos

Make these delicious Chipotle Cheese Chicken Taquitos in your slow cooker!

1 lb. boneless and skinless chicken breasts

3/4 cup low sodium chicken broth

16 oz. cream cheese

1/2 cup sour cream

2 chipotles in adobo sauce, diced small

1 tsp. chipotle chili powder

1 tsp. ground cumin

1 tsp. garlic powder

1 tsp. onion powder

3/4 tsp. ground black pepper

1/2 tsp. fine sea salt

1 cup sharp cheddar cheese, grated

12-6 inch tortillas, corn or flour

sour cream, salsa, pico, avocado and red onion for topping and dipping

Put in your slow cooker, chicken breast, chicken broth, cream cheese, sour cream, chipotles, chipotle chili powder, ground cumin, garlic powder, onion powder, salt and black pepper.

Cook on high for 4-6 hours or low for 8-10 hours.

Once the chicken has cooked, stir and shred the chicken with 2 forks. Keep the slow cooker set on warm or low.

Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.

Prepare tortillas by placing 2 Tbsp. shredded chicken and 1 Tbsp. cheese down the middle.

Roll tortillas up firmly and place seam side down on the prepared baking sheet. Repeat for all remaining tortillas.

Place in oven and bake 10-12 minutes or until the tops are just beginning to brown and the cheese is melted.

Remove from oven and serve immediately with desired toppings.
