Chile Colorado Burritos

Make these delicious Chile Colorado Burritos for an unforgettable delicious meal that everyone will love and let your slow cooker do all the work!

1 1/2 to 2 lbs. stew meat or top sirloin, cubed

1 20 oz. can mild red enchilada sauce or homemade

2 beef bouillon cubes

1/2 can refried beans, optional

5-7 10 inch flour tortillas

1 cup of shredded cheddar cheese

Put beef, whole bouillon cubes and enchilada sauce in a slow cooker and cook on low for 7-8 hours or on low for 3-4 hours, until meat is very tender.

When beef is very tender and flakes when stirred, taste and add salt if needed. Heat refried beans in a microwave and turn the oven to broil. On an oven proof plate, or baking sheet, lay out a tortilla. Place 1/2 cup meat on tortilla, drained by using a slotted spoon, add a spoonful of beans. Roll into a burrito. Pour some of the remaining enchilada sauce from the slow cooker on burrito to cover. Sprinkle with shredded cheese.

Broil about 2-4 minutes or until cheese is bubbly.

Makes 5-7 burritos, depending on size you make them
