Chickpea Salad with Tuna

You can’t go wrong with healthy Chickpeas with Tuna in this delicious salad!

2 cups cooked or canned chickpeas

2 cloves garlic, minced

3 Tbsp. olive oil

1 Tbsp. vinegar

1/4 tsp. chili powder

salt to taste

freshly ground black pepper to taste

4 large radishes, sliced

3 Tbsp. chopped parsley

3-4 leaves fresh basil, chopped or 1/2 tsp. dried basil

Drain the chickpeas, reserving 1 tablespoon of their liquid.

Add liquid to garlic, oil, vinegar, chili powder, salt and pepper. Stir to blend.

Pour over chickpeas, toss with the radishes and tuna.

Sprinkle with parsley and basil over the top.

Serves 4
