Chicken Fried Steak Bites

These Chicken Fried Steak Bites makes a great snack or a nice dinner meal, just add a vegetable!

1 lb. cube steak

pinch of salt per steak

pinch of pepper per steak

Batter:

1 egg

1 Tbsp. hot sauce

1 tsp. salt

1 tsp. pepper

1 tsp. baking soda

1 tsp. baking powder

1 1/2 cups buttermilk

Dredge:

1 cup flour

1 tsp. salt

Gravy:

1 Tbsp. flour

2 tsp. salt

1/2 tsp. black pepper

2 cups milk

Season steak with a pinch of salt and pepper, cut steak into bite-sized pieces.

In a large bowl, combine all batter ingredients. Whisk until all ingredients are mixed thoroughly.

Preheat about an inch of oil to 350 degrees in a heavy skillet.

In a medium bowl, add flour and salt. Place steak into the flour, then batter, and then flour again.

Place the steak bites carefully into the hot oil, being careful not to overcrowd the pan.

Cook each side for 4 minutes or until golden brown.

Transfer steak to a drying rack and season with salt.

Discard the oil in the pan, leave some oil for the gravy.

In the same skillet , add flour, milk, and salt, mix until thickened. Dip the steaks into gravy and eat.

Serve with Fresh Corn & Arugula Salad.
