Chia Chocolate Chip Oatmeal Breakfast Cookies

There is no flour, butter, oil or refined sugars added in to these Chia Chocolate Chip Oatmeal Breakfast Cookies. They are packed with Omega-3s and are gluten free!

1 cup shelled walnuts

1 cup raw, unsalted almonds

2 Tbsp. raw, unfiltered honey

1 tsp. vanilla

1 egg

1/2 tsp. baking soda

1/2 tsp. ground cinnamon

1/4 tsp. salt

1/2 cup dried cherries, coarsely chopped

1/4 cup dark chocolate chips

1 Tbsp. chia seeds

1/2 cup gluten free rolled oats

Preheat oven to 350 degrees.

Spread walnuts and almonds on a baking sheet in a single layer. Toast nuts for 8-10 minutes, stirring halfway through. Leave oven on.

Place toasted nuts in a food processor , process until completely smooth and very creamy, similar to peanut butter. Add honey, vanilla, egg, baking soda, cinnamon and salt to processor, process until well combined.

Transfer to a medium bowl and fold in cherries, chocolate chips, chia seeds and oats.

Use a small cookie scoop to drop cookies and roll into balls.

Place on greased baking sheets, then slightly flatten with palm of your hand.

Bake 7-9 minutes or until edges are slightly golden brown. Allow to cool on cookie sheet for 10 minutes.

Transfer to a wire rack to finish cooling.

Makes 15 cookies.

Store in an airtight container-cookies will keep well for 3-5 days.
