Cherry Chocolate Marble Cake

This Cherry Chocolate Marble Cake is like eating chocolate covered cherries in a cake! Great dessert to serve on Valentine’s Day.

1 cup butter, softened

2 cups sugar

3 eggs

6 Tbsp. maraschino cherry juice

6 Tbsp. water

2 tsp. almond extract

3 3/4 cups all-purpose flour

2 1/4 tsp. baking soda

3/4 tsp. salt

1 1/2 cups sour cream

3/4 cup maraschino cherries, drained and chopped

3/4 cup chopped walnuts

3 1 oz. squares unsweetened baking chocolate, melted

powdered sugar, garnish

Beat butter and sugar in a large mixing bowl at medium speed with an electric mixer, add eggs, one at a time, beating well after each addition. Mix in cherry juice, water and almond extract, set aside.

Combine flour, baking soda and salt, blend into butter mixture alternately with sour cream.

Place half the batter in another mixing bowl, stir in cherries and walnuts. Set aside.

Blend chocolate into remaining batter, set aside.

Spoon half the cherry batter into a greased 10 inch angel food baking pan, spoon half the chocolate batter on top. Repeat layers.

Bake at 350 degrees for one hour and 15 minutes or until a toothpick inserted comes out clean.

Cool in pan for 30 minutes, remove to a serving platter to cool completely.

Sprinkle with powdered sugar or frost with Chocolate Icing before slicing.
