Cheesy Turkey Rellenos

Cheesy Turkey Rellenos are a great way to use up leftover turkey plus they taste great!

4 4 oz. cans whole green chilies, drained and rinsed

1/4 lb. pepper jack cheese, sliced into 1/2 inch strips

2 cups cooked turkey, sliced into 1/2 inch strips

1/2 cup all-purpose flour

1/2 tsp. baking powder

1/4 tsp. salt

1/2 cup milk

3 eggs, beaten

2/3 cup shredded cheddar cheese

Slice chilies up one side, remove seeds and spread open flat.

Arrange in a greased 11 x 7 inch baking pan. Fill each chile half with pepper jack cheese and turkey strips.

Fold chilies closed and place seam side down in dish.

In a medium bowl, combine flour, baking powder and salt.

Whisk together milk and eggs, slowly add to flour mixture, beating until smooth. Pour over chilies.

Bake, uncovered, at 450 degrees for 15 minutes. Remove from oven and turn off heat.

Sprinkle cheddar cheese over top and return to oven until cheese is melted.
