Cheesy Chicken Noodle Casserole

This Cheesy Chicken Noodle Casserole makes a comforting, delicious homemade meal to serve for dinner tonight!

12 oz. egg noodles, cooked

1/2 cup butter

1/2 cup all purpose flour

1 tsp. salt

1/2 tsp. fresh ground black pepper

1/4 tsp. garlic powder

1 tsp. dried basil

4 cups low sodium chicken broth

24 oz. small curd cottage cheese

1 large egg, beaten

2 cups shredded mozzarella cheese, divided

3/4 cup freshly grated Parmesan cheese, divided

4 cups chopped cooked chicken

fresh parsley leaves, for garnish

Cook egg noodles in a large pot of boiling water until al dente. Drain and set aside.

Melt butter in a large saucepan over medium heat. Add flour, salt, pepper, garlic powder and dried basil. Cook, stirring for about 1-2 minutes.

Slowly whisk in chicken broth until mixture is thickened, about 5-10 minutes. Remove from heat.

Preheat oven to 350 degrees.

In a large mixing bowl, stir together cottage cheese, egg, 1 cup mozzarella cheese and 1/2 cup Parmesan cheese. Add in the chicken broth mixture.

Fold in cooked chicken and noodles. Taste and add additional seasonings if needed.

Pour mixture into a greased 9 x 13 inch baking dish. Top with remaining mozzarella and Parmesan cheese.

Bake, uncovered for 30-40 minutes or until top is golden and bubbly.

Cool 10-15 minutes before serving. Serve with Green Beans with Tomato and Bacon.
