Cheese Soup

If you are wanting something lighter than meat and vegetable soup, try this Cheese Soup for a nice change.

1 Tbsp. butter

1 Tbsp. finely chopped onion

1 Tbsp. flour

1 cup beef stock-homemade recipe here or use bouillon

2 cups milk

1/4 cup grated cheddar cheese

Melt butter in a large saucepan, add onion and cook slowly until onions are transparent.

Stir in flour and continue to cook for 3 minutes, stirring. Slowly add the beef stock and milk.

Heat just to boiling, stirring frequently.

Stir in cheese and whisk until cheese has melted and soup is hot.

Yield: 4 cups
