Carrot Cake Swirl Bars

These Carrot Cake Swirl Bars make the perfect dessert to take to any gathering, they are absolutely delicious!

Carrot Cake:

1/2 cup butter, melted

1 cup packed light brown sugar

1 large egg

1 Tbsp. vanilla extract

1 cup all purpose flour

1 tsp. cinnamon

1/4 tsp. baking powder

1/4 tsp. salt

1 cup shredded carrots


4 oz. cream cheese, at room temperature

1/4 cup sugar

1 large egg yolk

3/4 tsp. vanilla extract

Preheat oven to 350 degrees. Spray an 8 x 8 inch baking pan with cooking spray. Line the pan with parchment paper and set aside.

To prepare Carrot Cake: Place butter in a microwave safe bowl and microwave in 30 second increments until melted completely.

In a medium bowl, add the melted butter and brown sugar, mix to combine.

Stir in the egg and vanilla.

Add the flour, cinnamon, baking powder and salt. Stir to completely combine.

Fold in the shredded carrots and set aside.

To prepare Cheesecake: In a medium bowl, add cream cheese and sugar. Beat until smooth. Add egg yolk and vanilla. Beat until smooth and creamy.

Place about half of the carrot cake batter into the prepared pan and spread it out evenly.

Dollop half of the cheesecake batter over the carrot cake batter.

Add the remaining carrot cake batter on top of and around the cheesecake batter. Dollop the remaining cheesecake batter.

Using a knife, swirl the batters together as much as you prefer.

Bake 35-40 minutes or until the edges are golden brown. The center will be slightly jiggly.

Cool completely before cutting. Store in an airtight container in the refrigerator.
