Carrot Bars with Cream Cheese Icing

These Carrot Bars with Cream Cheese Icing make a wonderful treat!

4 eggs, beaten

1 tsp. salt

2 tsp. soda

2 1/2 cups flour

3 small jars strained baby food carrots

2 cups sugar

2 tsp. cinnamon

1 1/2 cup canola oil

1/2 cups chopped walnuts

Combine ingredients. Pour into  a greased 11 x 16 inch baking pan.

Bake in a 350 degree oven for 30-40 minutes. When bars are cool, spread with cream cheese icing.

Cream Cheese Icing:

4 oz. cream cheese, softened

1/2 cup butter, softened

2 2/3 cups powdered sugar

1 tsp. vanilla extract

Beat cream cheese and butter together until creamy. Add powdered sugar and beat until sugar is dissolved. Add vanilla, mix well and frost bars.
