California Chicken Casserole

This California Chicken Casserole will make a quick, delicious dinner meal!

16 oz. bag frozen California vegetable blend, thawed

2 cups diced cooked chicken

1/2 cup sliced fresh mushrooms

2 celery ribs, finely chopped

2 Tbsp. butter

1/4 cup mayonnaise

1/2 cup half and half cream

salt and pepper to taste

1 clove garlic, minced

6 oz. Swiss cheese, shredded

Place the California blend vegetables and chicken in a greased 9 inch square baking dish.

In a medium skillet, saute mushrooms, onion and celery in butter until soft and a little browned. Add garlic and cook another minute. Stir in mayonnaise, half and half and seasonings. Stir to mix well. Add remaining ingredients.

Transfer to baking dish and mix all ingredients together.

Cover the dish with foil and bake at 350 degrees for 40 minutes, uncover and bake 5-10 minutes more.
