Cabbage Roll Soup

Make this wonderful Cabbage Roll Soup for a delicious dinner meal tonight!

2 lbs. lean ground beef

1/2 large cabbage, sliced

1-16 oz. jar marinara sauce

5 cups low-sodium beef broth

4 cloves garlic, minced

1 yellow onion, finely chopped

1/2 head cauliflower, grated

2 Tbsp. extra virgin olive oil

1 tsp. dried parsley

1 tsp. dried oregano

1/4 tsp. red pepper flakes

salt and pepper to taste

Heat olive oil in a large pan or skillet over medium-high heat and saute onion until softened and translucent. Add garlic and cook until fragrant. Add ground beef, season generously with salt and pepper and add parsley, oregano and pepper flakes. Cook until ground beef is browned on all sides.

Using a large slotted spoon, transfer mixture to a slow cooker. Stir in marinara, beef broth, cabbage and grated cauliflower. Mix well.

Cover and cook on high for 3 hours or low for 6 hours, or until cabbage is tender.

Taste and adjust seasonings if necessary.
