Cabbage and Beet Soup

Cabbage and Beet Soup is a coarse peasant soup that is nutritious and delicious!

1 quart beef stock-homemade recipe here or use beef bouillon to taste

2 cups peeled and diced raw beets

1 onion, chopped

2 cups coarsely chopped cabbage

freshly ground black pepper & salt

2 Tbsp. cider vinegar

1/2 cup sour cream, to garnish, optional

Pour the stock, beets, onion and cabbage in your favorite soup pot.

Bring to a boil, lower heat and simmer, partially covered, replacing any liquid that evaporates with additional stock or water.

Simmer for about 30 minutes or until beets are tender.

Season with pepper, vinegar and salt to taste.

Serve hot or cold with a tablespoon of sour cream floating on top of each bowl.

Yield: 18 cups
