Butter Pecan Shortbread Bars

These Butter Pecan Shortbread Bars will make the best fall dessert to serve at many occasions, plus they are simple to prepare!

1/2 lb. unsalted butter, melted

1/2 cup brown sugar, firmly packed

1/2 tsp. almond extract

1 1/2 cups flour

1/2 cup oat flour

5 Tbsp. cornstarch

1 1/4 cups pecans, roughly chopped with some left whole

Preheat oven to 350 degrees. Lightly spray a 9 x 9 inch baking dish.

Whisk the melted butter with the brown sugar in a large mixing bowl, working out any lumps.

Blend in extract, stir in the flours, cornstarch and nuts. Stir until everything is combined and nuts are evenly distributed. Don’t over mix.

Pat the dough evenly into the prepared baking dish with your hands.

Bake 25 minutes or until the dough is beginning to turn golden around the edges, the top will still look pale.

Cool on a wire rack about 15 minutes before cutting into squares. Try serving with a delicious cup of Honey Coffee, if desired.
