Butter Pecan Cookies

These Butter Pecan Cookies are Keto, low carb and gluten free. They are a delicious buttery, crisp, sweet cookie you will enjoy!

1 stick cold salted butter, cut into pieces

1 cup almond flour

1/3 cup coconut flour

2/3 cup trim healthy mama gentle sweet, divided

2 tsp. gelatin

1 tsp. vanilla extract

1 cup pecans

Preheat oven to 350 degrees. Line a large baking sheet with parchment paper.

Combine butter, almond flour, coconut flour, 1/3 cup of sweetener,  gelatin and vanilla in a food processor. Pulse until wet crumbs form. Add pecans. Pulse until they are chopped and a dough forms.

Divide the dough into 16 pieces. Put the remaining 1/3 cup sweetener in a shallow bowl. Roll each piece of dough into a ball. Place it in the sweetener and press it into a disk. Flip over and press again so both sides are dusted with sweetener. Place on the prepared baking sheet. Repeat with remaining dough balls.

Bake 17-19 minutes or until the edges are brown.
