Buffalo Chicken Sloppy Joes

Change up your sloppy joes with these delicious Buffalo Chicken Sloppy Joes for an easy dinner your family will love!

Buffalo Chicken:

1 lb. lean ground chicken or turkey

1/2 yellow onion, diced

2 carrots, diced

2 celery ribs, diced

2 cloves garlic, minced

1 tsp. kosher salt

1/4 tsp. black pepper

1/4 cup low sodium chicken broth

8 oz. can tomato sauce

1/4 cup buffalo wing sauce

1 Tbsp. Worcestershire sauce

1 Tbsp. apple cider vinegar

Bleu Cheese Ranch Sauce:

1 cup plain non-fat Greek yogurt

1/3 cup crumbled bleu cheese

3 Tbsp. buttermilk

1 Tbsp. fresh lemon juice

1/2 tsp. dried parsley

1/4 tsp. dried dill

1/8 tsp. garlic powder

1/8 tsp. onion powder

salt & pepper to taste

To prepare buffalo chicken sloppy joes: Over medium high heat, spray a large skillet generously with cooking spray. When the skillet is hot, saute the onion, carrots and celery until they start to soften, about 3 minutes. Add the garlic and saute for another minute. Add the ground chicken and stir to crumble until no longer pink. Season with salt and pepper to taste. Add in the chicken broth and scrape any bits from the bottom of the skillet.

In a small bowl or measuring glass, whisk together the tomato sauce, wing sauce, Worcestershire and apple cider vinegar. Pour the sauce over the chicken and vegetables and stir to coat. Simmer for about 5 minutes or until the sauce has thickened slightly.

Serve on hamburger buns topped with bleu cheese ranch sauce.

To prepare Bleu Cheese Ranch Sauce: In a small bowl combine the yogurt and the crumbled bleu cheese. Use the back of a fork to mash the bleu cheese into the yogurt. Whisk in the buttermilk and remaining ingredients.

Serve immediately on top of the chicken or cover and refrigerate until ready to use. Serve with Garlic Chive Baked Fries.
