Brown Sugar Pecan Cookies

These wonderful Brown Sugar Pecan Cookies are soft, moist pecan cookies topped with an easy brown sugar frosting. Perfect for any occasion!

Cookies:

1 cup butter, softened

1/2 cup sugar

1/2 cup packed brown sugar

1 large egg

1 tsp. vanilla

2 cups flour- half whole wheat and half all-purpose

1/2 tsp. baking soda

1/4 tsp. salt

1/2 cup finely chopped pecans

36 pecan halves or chopped, toasted

Frosting:

1 cup packed brown sugar

1/2 cup milk or cream

1 Tbsp. butter

2 cups powdered sugar, sifted

In the bowl of a stand mixer, beat butter and sugars until light and fluffy. Add in egg and vanilla, beat until combined. Add in flour, baking soda and salt, beat to combine. Stir in chopped pecans.

Cover and refrigerate 30 minutes or longer.

Preheat oven to 350 degrees.

Shape dough into 1 inch balls and place 2 inches apart on a lightly greased cookie sheets.

Bake 10 minutes or until set and lightly browned at the edges. Cool before frosting.

To prepare frosting: Combine brown sugar and milk in a small saucepan over medium heat. Bring to a boil. Let boil for 3-4 minutes, stirring occasionally. Remove from heat and stir in butter.

Stir in 1 1/2 cups powdered sugar and whisk or beat with mixer until smooth. If frosting is too thin, add more powdered sugar, keep in mind it will firm up much more in a few minutes.

Spread each cookie with about 1 Tbsp. frosting and top with a pecan half or chopped pecans.

Let frosting set before storing cookies.

Yield 3 dozen
