Bourbon Pecan Chocolate Chunk Cookies

These Bourbon Pecan Chocolate Chunk Cookies are made with brown butter, bourbon and pecans, cookies don’t get any better than this!

Pecans:

1 1/2 cups pecan halves, finely chopped

1 1/2 Tbsp. unsalted butter

Cookies:

1 cup unsalted butter, melted and browned

2 1/3 cups all purpose flour

1 tsp. salt

1 tsp. ground cinnamon

1 tsp. baking soda

1 cup dark brown sugar, packed

2 tsp. vanilla extract

2 Tbsp. bourbon

2 large eggs, at room temperature

12 oz. dark chocolate, roughly chopped into chunks

24 pecan halves, for decoration, optional

To prepare Pecans: Melt butter in a large skillet over medium heat. Add the chopped pecans and cook, stirring occasionally for 4-5 minutes or until lightly toasted. Set aside.

To prepare Brown Butter: Place butter in a small saucepan over medium high heat and cook about 3 minutes, stirring constantly, until the butter has browned. Pour the brown butter into a heatproof bowl, scraping all of the toasted bits into bowl as well. Place the bowl in the refrigerator for 2 hours or until butter is at room temperature. The butter should not be liquid.

To prepare Cookies: Preheat oven to 375 degrees. Line two large baking sheets with parchment paper and set aside.

In a large bowl, using an electric mixer or stand mixer, combine the browned butter and both sugars. Beat on medium speed until light and fluffy, about 2 minutes. Add vanilla and bourbon, beat until combined. Add the eggs, one at a time, beating 15 seconds after each addition. Using a wooden spoon gently fold in flour just to combine. Fold in chocolate chunks and buttered pecans.

Roll about 3 tablespoons of dough into balls and place on prepared baking sheets, about 2 inches apart. Repeat with remaining dough. Press a pecan on top of each cookie, if desired.

Bake one pan at a time, 9-10 minutes or until golden at the edges but soft in the middle. Repeat with remaining cookie dough. Sprinkle cookies with sea salt as soon as they come out of oven.

Let cookies cool 10 minutes on baking sheet before transferring to a wire rack to cool completely.
