Blueberry Muffin Streusel Cake

This Blueberry Muffin Streusel Cake is an easy recipe making a delicious treat to serve!


1 cup all purpose flour

1 1/2 tsp. baking powder

1/2 cup sugar

1/2 cup skim milk or alternative

1 egg

2 Tbsp. canola oil

1 cup fresh blueberries

Streusel Topping:

1/3 cup sugar

1/3 cup light brown sugar

1/2 cup all purpose flour

2 tsp. ground cinnamon

1 tsp. vanilla extract

3 Tbsp. butter, softened

1/2 cup chopped pecans

To prepare Cake: Preheat oven to 375 degrees. Spray a 9 inch square baking pan with nonstick cooking spray.

In a bowl, mix together flour, baking powder, sugar, milk and egg.

Stir in oil and blueberries, just to combine.

To prepare Streusel Topping: In a small bowl, mix together sugar, brown sugar, flour and cinnamon.

Using a pastry blender or fork, cut in butter and vanilla.

Reserve 1/2 cup topping and then add pecans to the remaining mixture.

Sprinkle 1/2 cup reserved Streusel Topping on bottom of pan. Carefully spread cake mixture on top. Cover with remaining Streusel Topping with pecans.

Bake 20-25 minutes or until a toothpick inserted in center comes out clean.
