Black Forest Cupcakes

These Black Forest Cupcakes make a tasty treat for many holiday parties!

1 cup flour

1/2 tsp. baking powder

1/2 tsp. baking soda

1/2 tsp. salt

6 Tbsp. butter, softened

1 cup sugar

2 eggs

2 1 oz. squares unsweetened baking chocolate, melted & cooled

1 tsp. vanilla extract

1/2 cup milk

cream cheese frosting recipe or chocolate buttercream frosting recipe

21 oz. can cherry pie filling

Whisk flour, baking powder, baking soda and salt together, set aside.

Beat on high speed with an electric mixer until fluffy, gradually blend in sugar.

Continue blending until light and fluffy, beat in eggs, one at a time.

Add melted chocolate and vanilla. Add flour mixture alternately with milk until just mixed.

Spoon batter into paper-lined muffin tins, filling 2/3 full.

Bake at 350 degrees for 15-20 minutes.

Cool 15 minutes on a wire rack before removing from pan.

Spread with frosting of choice and top each with a tablespoon of cherry pie filling.

Makes 12 cupcakes
