Black Bean Salsa

Black Bean Salsa is a tasty appetizer to serve with tortilla chips or crackers.

2 15 oz. cans black beans, rinsed and drained

1 17 oz. package frozen whole kernel corn, thawed

2 large tomatoes, seeded and chopped

1 large avocado, peeled and chopped, optional

1 small onion, chopped

1/8 to 1/4 cup chopped fresh cilantro

3-4 Tbsp. lime juice

1 Tbsp. red wine vinegar

salt and pepper to taste

Mix all ingredients thoroughly in a large bowl.

Cover and chill overnight.

Taste and adjust salt and pepper or lime juice if necessary.

Serve with tortilla chips as an appetizer or with your favorite grilled meat.
